You'll see me in Mad Dog for for the next half of the year in game. Then I'll probably go back onto my quest to max out all the pilot skills of all mechs. =p
Though my signature mechs in Mechwarrior 2 when I didn't play Mad Dog were Fire Moth (loved a challenge), and Jenner IIC because of it's fast speed, Jumpjets, and missiles.
If Mad Dog wasn't my signature mech, then I'd probably give that honor to Shadow Cat. While it doesn't have Missiles, I do like mechs that are dedicated towards Sniping, and I love mechs that run fast with jumpjets.
After that I'd have to say Cougar, because that's basically a mini Mad Dog, and it can have jumpjets and it is one of the few mech designs I actually liked a lot in MW4. Sometimes I just like the idea of being a smaller mech, beating up a vastly superior larger mech...... I blame that on my experience as playing an elemental defeating a Dire Wolf in Mechwarrior 2, long battle but it was so fun and tense.
For a Inner Sphere mech though, It's easily the Catapult, and quite often the Frozen City concept art is my background. Whether It's being a Splatcat jumping behind someone to "backstab" them with a massive alpha, or being a mobile LRM boat with jumpjets, I love the heck out of the Catapult. It's my favorite MWO Inner Sphere design, and my favorite re-design. I had a lot of fun with the Catapult A1 in closed beta, and the Catapult C1 is my go-to LRM boat mech (4 medium lasers for self defense is nice). Can't really sneak around with 12 v 12 though like you could in 8v8 though.
If I couldn't choose the Catapult, I'd probably go with the Jenner, because going stupid fast with jumpjets and dealing decent damage against the larger enemies.
If i couldn't even choose the Jenner, I'd go with the Dragon. Because I love it's design so much in MWO, and it's fun being a speedy mech.
Yeah, Kurita all the way when it comes to Inner Sphere for me.

One thing that I like in particular about Jenners is the realization (from some other poster, I forget who) that due to the size of the center torso the side torsos on the Jenner are so small that you can safely strip all but a few points of armor off, and it allows builds like this which would otherwise run pretty hot or not have any jumpjets or some other disadvantage, although there could be more SRM ammo in there.
Honorable mentions are the CN9-D auto shotgun brawler (after quirks) and my gauss/2x ERLL shadowhawk sniper.

Warhawk Prime - 4 ER PPCs, 1 AMS. Another high heat build most cannot handle well. But i make that blue lightning work for me!

WubShee is definitely still in first place. Though, I'm also using the NopeVa a fair bit. It can have even more Wub than the WubShee. I plan on bringing Maximum Wub a few times, with 14 SPLs, though even 12 is plenty.
A 14 ERSL build, I do see myself in. Though, I have to settle for 13 ERSLs at the moment. Maximum PEW.

My tastes change day to day, or even match to match. I own 59 mechs at the moment and probably 3/4 of them all get used.

If I were to pick a mech, that I would like for a signature mech regardless of play-time, it would be my Founders Catapult-C1 "Railbird", lovingly restored to factory-stock, and painted canary yellow (under all that grime).

You're quite right sir and or madam, but what we do have, are several mechs that can run the Marauder's Loadout. Most commonly, the 3D cataphract.
[if Warhammers were around in MWO, I'd pilot nothing else.]
