I've never used them but how is it determined what way they will fall. I'm assuming it is the same way the mech was facing when they are dropped? Or is it something more obscure like it lines up with the way their legs were facing when they are dropped.

The airstrike will hit in the direction you were facing when you activated it, starting at the point it was aimed at.

As above.
To expand: The point of origin (where the first bomb will fall) is determined by where your "o" crosshair is pointing at the exact moment you press the button.
Do note: Pointing at invisible geometry (i.e., too close to a ledge or pillar) will cause you to aim for the ledge instead of the intended target.
