What happens when you master three mechs and decide to sell 2 of them--would the mastering of the mech you keep continues to be in iffect, or would it be grayed out as disabled due to the sale of the other 2 mechs?

You keep all of the experience you gained while you owned that variant. So if you buy that variant back, you are still mastered.

Also you keep all the benefits of mastery or whatever you have on the one you didn't sell.

For those who didn't know already, unlocking master tier requires 3 elite variants of a given weight class, not chassis.
So if you only like one variant of a specific chassis you only need to elite that one if you've already unlocked master tier for that weight class. You'll still need 3 variants of the chassis to unlock elite tier, but you won't have to play variants you don't like for nearly as long as you would otherwise.
