There are already hot maps, cold maps, dark maps, vacuum maps... How about underwater and underground?
Underwater map shouldn't be hard to make, just screen filter, drowned sounds (similar to Manifold) and some gameplay quirks like improved cooling and reduced mechs' speed.
Underground map's feature must be a CEILING all over the map. We already have Alpine LRM/sniper heaven, what about tight close combat hell? «Underground» is just an option, it could also be a spaceship interior or a city under dome.
I'm sure I'm not the first one who has these ideas.

Overheating under water should produce a massive vapour trail above that mech to show others where it is.

Yes to both, please! I'd just add that there should be movement penalties on the underwater map, especially if it's deep under water.

Simple idea for the underwater map - fill up the rivers on Canyon Network to either the second or third level height, introduce weapon and movement penalties for amount of underwater, and increase HS efficiency for all submerged ones. Also able to do Caustic Valley, and have the water be hotter, providing some cooling but not very much.

Nothing would look more kick-ass than a lance of Mech's submerging into a river then coming back out to flank someone

Only problem with an underwater map, would be all the penalties involved. A Hybrid map would make it worse, SRM/LRM launchers if I recall could fit torpedo variations of their ammo, but you don't really want to have to carry both types of ammo. I don't think any projectile weapons functioned underwater, and energy weapons had range penalties. Underground would be a change, but, I'd personally rather see some larger all City maps,
