I messed around with it yesterday and settled on 75. Gives a really nice immersion feel for sitting in the cockpit at what I consider to be 'in the pilot seat' field of view.

When you look through a window, the closer you get to the window the wider your view of outside gets.
Imagine your monitor as that window and the game as the view outside, and you can see why the closer you sit the wider the view angle should be to feel natural.

I dont like going much past 75. It starts to zoom out the actual world and makes everything smaller and harder to target and stuff...
But higher FoV does make the cockpit look nice.

Whatever value gives you full view of your cockpit window. It provides maximum situational awareness of mechs and obstacles.
The zooms are unaffected, so when you need precision shots, just zoom in once or twice.

I run it at 60 lol. I tend to spend a lot of time at 1.5x zoom so having less than 1x zoom at default just really sends my brain mental.

It depends on how big your screen is and your specs. Anti Aliasing and object quality will also determine which fov is best. No AA and low object detail on a smaller screen while using a large FOV will make it almost impossible to discern players at any appreciable distance.
Also, wider fov is more taxing on your computer, which isn't an issue if you can already run the game well, but if you're on the fence a lower fov might give you some frames. Your screen size/resolution will determine the physical size of an object on your screen.
I have mine at 85, lower than what I would prefer for a first person shooter, but in the cockpit of a mech it's fine.
edit: yes 120 degree fov will give you situational awareness at close range, but you'll have to remember when to zoom because you will not see long ranges very well at your 1x zoom.
