gets me 60 on 2560x1080 so a bit less, I'd say

Quite a lot less.
Resolution is a killer for GPU's; running at 1920x1080 is vastly less demanding than 2560x1080.
But the CPU part is critical for MWO. It's highly CPU dependent.
As I said, my i5 4690 handles MWO at 60fps just fine; my old Phenom 2 965BE at 4ghz got me 45fps with the same GPU.

I would suggest a core i5, 8gb of ram, NV 970 or AMD 290. Should get you what you need.

760 or better x60 class will be fine, as would an AMD 270.
Basically, a roughly $200 GPU and a decent i5, or equivilant AMD CPU.
Edit: The reason I posted this is there's a very substantial difference in cost between a x70 and a x60 Nvidia GPU, and the (newer) x60's will be fine. Likewise with the Radeon's, the midrange card is good enough for MWO.
