Wolverine can do ballistics as well. For heavy I am currently using the Marauder and the Orion, but Jagermech for that DAKKA! Don't forget the Cataphract either.
Lights I don't have much experience with.

In short, there are a lot of ways the IS can satisfy your dakka cravings

For IS Mediums the Hunchback and Centurion are nice, as already mentioned. The Blackjack is also an excellent ballistic choice. Then there's the Shadowhawk, which also acts like a jumping Hunchback if built as such. Also don't underestimate the ballistic Cicada and Trebuchet variants.
Then on the Heavy front you can't go without mentioning the Jagermech and Cataphract. Of course there's also the Dragon, and there's some respectable ballistics to be found on the Orion, as well.

As for the STD 200, that's just what she came with. Though... to be fair, I do have a tendancy to under engine an overgun my battlemechs. If you want to rebuild my Shadowhawk series, you'd wanna purchase STD 170s... Just sayin'

Locust (1v, 3v, Pirates Bane) (if you want to be able to both move and have armor max of AC2)
Spider (5k, Anazi) (anything smaller than an AC20, but to take a Gauss you will not be going fast or taking much ammo or armor)
Panther (10p)
Arctic Cheetah (B right arm omnipod)
Cicada (3m, 3C) (the consensus of the player base is that it is an overweight Light, ignore the fact that it weighs 40 tones technically making it a medium)

Then you have plenty of mechs like WVR and SHD which can run ballistics but which I wouldn't really call "ballistic mechs", as the loadouts tend to be somewhat mixed. But there are exceptions like the twin UAC5 SHD-5M and the triple AC2 SHD-2H.

There is a Dragon that can shoot dual AC5s very fast. Wolverine as well.
Marauders do well with them too, esp the 3R.

MGs work mostly against structure and crits not against armor.
So basicaly...the more tonnage the more dakka.
I won't realy consider putting ballistics on an light mech except for trolling purposes or spezialized structure rippers with MGs.
( hey LBX Spider is totaly fun and the reactions of enemy mechs are completly hillarious )
Mediums with ballistics:
I'm somewhat surprised the Blackjack wasn't mentioned so far.
