Do all Trial Mechs count as Champion Mechs?

no, they need to have the (c) after their name.
As such, the majority of the trial mechs ARE champions, and generally are the better choice than most of the stock variants.

Okay, I was just wondering because I used two different trial mechs and only got 1 progress added to the current event "Play with a champion mech."
