I recently purchased an Ebon Jaguar, and I was wondering if there is a way to upgrade your engine to increase the top speed. And if so, how?

Nope. OmniMech like the Ebon Jag have their engines completely locked.

You can always check this by viewing mech loadout in mechlab. There is an option in "Store" to view mech in mechlab, and there you can try to build and change whatever you want to. This is a good instrument to understand what is changeable on that mech, what cant be moved and what is locked, this mechlab is fully functional, the only difference between ordinary meclab - you cant save changes you have made before you purchase that mech. In everything else it gives you full feedom and shows you all locked and unlocked equipment. So if you are viewing mech lodout but you can't change mech engine or remove jumpjet/heatsink, that will remain the same after you will purchase it. So use it =)

Just to add, you'll get a slight increase in speed if you have at least 3 variants and skill them up to unlock speed tweak.

For future reference, checkout the Storm Crow.
A little less in the way of offensive tools, but far more mobile and agile.
