Windows 10, however, has ASMI, so it shouldn't be a problem should they attempt to try and take advantage of it.

Aside from turning it off, you can complete remove it with an administrative powershell command.
Get-AppxPackage | Where-Object {$_.name -eq 'Microsoft.Windows.Cortana'}|Remove-AppxPackage
Problem solved.

Removing unwanted features should be default. My Windows 10 on a new top end computer doesn't even have a place to do a search or enter a command......
Windows 10 will get sued for untold amounts of money from all this. I am just wondering if any of them go to prison.
No way this version of windows is aloud outside north America.

Sued for what? The same thing every smartphone, website/dot com, web broswer, and government do? Fat chance. At least you can turn it off and completely opt out in Windows 10, unlike any of the others I mentioned.

a right click on that icon on the far left side of the task bar will get you both a search and the ability to run a command.

I am no programmer but I havnt seen an option to opt out.
My sound card vanished and there was no way to replace it. So I had to do a reinstall. The reinstall of Windows 10 failed. Lost everything on this computer.
Windows 10 doesn't use Internet explorer by default. I really could fill this page with the troubles Windows 10 is giving.
They are selling a totally broken product to people that don't have a choice...... They have a responsibility.
Maybe I'm wrong and they wont get sued for completely off the charts amounts of money.
On the other hand I think things work out for the best. Steam used to disable their games after not logging in after a while. Also using Steam offline was a huge problem. Not problems any more.
Who knows maybe Windows 10 will turn out to be the best version of Windows yet.

Under Settings-Privacy is where 90% of it is. A quick google search on how to turn of tracking in windows 10 will provide all the options and steps to turn things off/remove them.
You can change the default apps for everything under one section now - Settings->system->Default apps.
The sound card thing - don't know what to tell you there - hardware detection is based on what the system board reports to the OS. Reload doesn't change that, more likely the wrong device driver or an unknown device was associated for your sound card that needed to be manually corrected. Didn't require a reload, but you have to know about device manager and how to remove/install drivers manually.
Sorry you think it's broken, but it's worlds better than 8, much better than 8.1, and has far better support for many features than Windows 7 such as multi-monitor support is 1000 times better than Win7. Sure it has drawbacks (like every MS OS ever released), but nowhere near what the tinfoil hat brigade tout.

My first install of windows 10 had that. This reinstall doesn't. It could be hidden somewhere else. I don't do much with that anyway so I cant be bothered to look.

Yep I know how to reinstall drivers and update them. Tried for hours.
Either way this isn't my problem.
When I did a construction job, if it wasn't done right, which was never, but if it wasn't, it was my problem, not the people that hired me. Its called responsibility.

I'm not surprised your having issues because by the sounds of it you've been disabling and removing windows components a sure way to create issues if you don't actually know what your doing.
Windows 10 default browser is edge...Internet Explorer although why you would want to use IE I have no idea

Yes it can there are multiple ways, one is with an elevated power shell command as was given above,
The other is to locate the cortana folder attempt to rename it, it will tell you it's in use leave the try again dialogue box open.
Open task manager, find cortana end it. Press try again folder renamed and will be unable to auto launch.
I haven't used the second method since the early days so weather MS have patched in security to prevent it I don't know
