Even though I have levelled 140 or so Mechs, I held off buying the iconic Catapults until after the rescale.
So here we are, after the rescale, with Catapult K2s on offer in the Challenge, and now the rest of the non-Hero Catapults are on sale...
Woot and bless you, PGI!
I'd appreciate if experienced Catapult pilots could let me know which Pults, and with what loadouts, you recommend for PUG play?

As a notorious CAT lover I feel urged to dispense my advice here.
(I'll post links to the actual builds later today)
In order of usefulness:
(Non-hero mechs bolded as you didn't want those but I feel I need to put them)
- CPLT-K2 (2xPPC + 2x(U)AC/5) - link
- CPLT-C1 (3xLPL) - link
- CPLT-J (3xLPL)
- CPLT-BB (4xSRM6+A + 4xMPL) - link
- CPLT-A1 (6xSRM6) - link
- CPLT-C4 (rust and dust)

So many builds that I'm seeing and feeling excited to try out

I picked up the Butterbee as soon as it was available and haven't been disappointed with it.
I tried it out with SRMs and it just didn't feel right. An A1 will do that. I tried it out with heavy LRM launchers and medium lasers but that lacked close up fighting firepower.
So I tried this next.
3 x Large Lasers
4 x LRM5s w/6.5 ton ammo
2 Jumpjets
280XL
Endo steel
13 DHS
Modules: LRM5 cooldown, lrg laser range,UAV,Arty strike, target lock retention, seismic or radar derp ( I move a lot so I usually go radar derper)
This build has been clicking for me and I almost always end a match in the top 3 for damage dealt and match score. I frequently do so well that even on a loss my match score is high enough to not drop value and sometimes advance.
Do not play this like it's a LURM spammer it's not it's a laser fighter with LRM support. Have your LRMs on chainfire (unless you run across AMS then group it up) You want to hang tight with your brawler buddies because you are the supression fire to keep the enemy ducking for cover as they close. Once things get close and personal you assist with the lasers and/or keep targets supressed with LRM barrages to keep the odds as unfair as possible in your team's favor.

Some nice K2s and how a n00b like me managed with them:
XL280, 4xLPL everything else is heat sinks. You can also alpha the 4 lasers without excessive problems.
XL300, 3xERLL, Gauss, plenty ammo and sufficient cooling. Use half ton ammo to fill up slots.
Then there are the classic 2xPPC+2xAC5, dual AC10, dual LBX10.

I guess the cats to get now are the A, K2 and Butterbee. Maybe the Jester if you like laserboats. If you wanna go with c-bills only, replace the Butterbee with a C1.

My favorite is the Jester, but the K2 is up there as well.
Edit: Forgot loadouts...
Jester:
2 LPLasers, 4 MLasers (whatever engine gets it to 90kph) and JJs.
K2:
It varies, but 2 A/C10s and 4 MLasers are always good. Sometimes 4 LPLasers or 2 PPCs and 2 LPLasers.
If you want something odd, 1 A/C20, 1 PPC, 3 MLasers.

Catapults have been my primary mech almost since I started in the game last year.
C1 was my first. Artemis, endo, DHS, BAP, AMS, 5t LRM ammo, ALRM15x2, MLx4, STD 260.
A1 next. Artemis, endo, DHS, BAP, AMS, 7t LRM ammo, 2t SSRM ammo, ALRM15x2, SSRM2x4, XL255.
C4 after that. Artemis, endo, DHS, BAP, AMS, 5t LRM ammo, 2t SRM ammo, ALRM15x2, ASRM4x2, MPLx2, XL255.
Jester next, still my most-dropped-in mech. Downgraded engine to STD 285, added a DHS, redistributed armor.
K2, least favorite of the six. DHS, endo, PPCx2, MLx2, uAC/5+2t ammo, STD 260.
Butterbee, Artemis, endo, DHS, AMS, 4t SRM ammo, ASRM6x4, MLx4, STD 260.
I like them a lot. I like them better now that they are sized better.

Couldn't find who posted it. I swore on 2 LPL (arms) + 4 MPL for my Jester ever since I bought it. I tested that 3LPL Suggestion posted here. Maan that rocks.
3 LPL (Torso) 2 ML Arms STD 270 Engine. Using LPL range and cooldown mods you get near 500m effective range at an awesome refire rate. Although it's the samish Alpha damage as my old build I get much higher damage numbers. And those three LPL do nasty things to Spiders and Locusts.

I used to run 2xAC10 and 4xML on the K2, but I also have Jagermechs and those do that build much better. Since the rescale, I've gone back to 2xPPC and 2xUAC5.
I also used to run typical builds on the C1, but find depending on LRMs to make your damage for you is incredibly unreliable. I've dropped to LRM10s and upgraded 2 of the lasers to Large... so now it's 2xLRM10, 2xLL, 2xML. Runs a bit hot, but a big surprise for folks that see a C1 as an easy target.
