I have five of them. Only one is unlocked. How do I unlock the other four? Also, Air/Artillery Strikes: Can someone point me at a video tutorial for these, if one exists? I'm terrified to use it and accidentally wipe out my own team because I pressed the wrong button. Or should I hold off on these until I'm more experienced?

Investing in the consumables section of the skill tree will begin to open up the other slots and improve the effectiveness of consumables.
When you use a strike a pillar of red smoke lands directly where you are aiming. An artillery strike will rain shells in a random pattern around the smoke. Air strike will drop a straight line of bombs starting at the smoke and traveling directly away from the spot you dropped it.

I know what happens when it' used, I've unfortunately been noobish enough to stand right in the middle of the Red smoke and then wonder why 2/3 of my Armour just vanished
What I don't know is how to use it as in how to 'fire' it.

Note that if you are saving c-bills for upgrades and mechs it's quite unwise to invest in a lot of consumables. I usually just use them for fun or when an event calls for them, otherwise you can end up spending 160,000 c-bills on a loss that gives you 60,000 c-bills. Using them frequently will hamper your earnings.
You can practice using artillery or air strikes, just make sure you don't drop it on your own team. I am not sure if Training Grounds will actually eat up your consumable if you test it there. You can go check so you can see the effect for yourself.

Didn't it give you a hint on how to "fire" it after 2/3 of your armor was gone?)
Anyway, coolshot must be pretty easy to understand. UAV just popping above your head whenever you use it. Arty and Air Strike fires where you point it to. ALWAYS check distance not to be pointing at invisible wall.

Done this, nuked most of my team, was sent to jail. Was highest damage I had done yet in the locust when I achieved it, just to the wrong folks.

Press F1 in game to bring up the controls.
The default consumable keys are insert, home, page up, delete, and end. Id suggest remapping them in the settings to something more practical.

A word of warning and advice about using strikes. They drop where the circle reticle is, which is for your arm mounted weapons. Make sure that you are NOT dropping it right in front of you. To do this, check the range to target and see if that matches with the range to aim point. The range to aim point show up as numbers near the reticle. The two numbers should be close, otherwise you may be dropping the strike too far behind the enemy to be effective, or may drop it on an obstruction that you can't see, but is close to your arm.
Now for the bit of advice. Arty strikes do more damage than air strikes, so always take arty.

It goes where the crosshair is pointed.
Specifically where the "O" crosshair is pointed if you're using the + and O crosshairs separately.
There's no travel time or arc for the smoke, it just magically appears where you had aimed.
