I keep wanting to have mechs with more mix between mobility/durability/firepower.
Found this gem.

You would need to alter the Arcas 3 to be MWO legal without using improved jump jets. Otherwise only 2/6 mechs would be canon under the existing mechpack model, which is quite low.

Ummm it's not like there haven't been multiple exceptions at this point in the game, and or originals. Hellfire comes to mind(A,B,C), all of the solaris 7 heroes, Urbanmech K9, Hellspawn (7P, 8P), Thanatos (4P,4S, 5P,5S,5T) are a few.

The Hellfire had three canon variants for the standard pack. The made up versions were the addons. Which other mechs had equipment modifications based on invalid tech? I can only think of the Orion Protector.

Thanatos (C3 slave unit on the -4S), Hellspawn (coolant pod and Angel ECM on the -7D2), Hellbringer (A-Pods on the Prime), and perhaps more.
And if we are talking about non-canonical loadouts of hero-Mechs, the list is long: Black Widow, Legend Killer, Tempest, Hi There, Darkdeth, and many more. Actually the majorty of the hero-Mechs.

The Marauder IIC was released with only two canonical variants (IIC and IIC-8), same with the Hellfire (-1 and -2 are canon, the rest are not), the Osiris (-3D and -4D are canon), the Uziel (-2S and -3S), the Supernove (-1 and -3), and probably more.
It's really not unusal at this point.
