Maybe I walked into the middle of a movie, but I can't seem to find much information on how servers/matches will be set.
Do the official faction languages basically indicate what part of the world (the real one) players are from?

No, it is just a representation of what they speak in lore.

It shows the origins of the factions. And so, a little of their culture and how they think.
But it's just a representation. You choose the one you find more appealing to you.
Like, I'm from Brazil, no factions anywhere near of it (nor anyone speak Portuguese), and I'm fighting for the Steiner House, which is basically German / Western European thinking and point of view. =]

If you are asking if the faction language is the server language then no. The dominant language for BT is English, with a few 'localised' other languages. This will be the 'language' upon which the MWO game is based. No doubt once all is up and running, including the Community Warfare side, then you will easily find a Merc Corp that is in the language of your choice. The same as every other MMO.
