Does anybody know what the rarest mech variants are or if there is a list or anything?
Thanks

King Crab KGC-000b, KGC-0000, and all Champions. Only a handful (Double digit) of either of these existed outside of ComStar vaults prior to the Clan Invasion.

Mackie?
Definitely too many king crabs.
Honestly heavies should be rare in the first place. And seeing an assault should be EPIC.
But people hate lights and mediums. So less immersion.

It really depends on which part of the timeline you're talking about. Most SLDF Royal exclusives and other LosTech-heavy variants were functionally extinct to most of the Inner Sphere in the 3025 era, for example, although some were reintroduced as old tech was rediscovered. Or if you include experimental prototypes, like the lone Rifleman III ever built.

If we count non-MWO variants, yes, Mackie is rare beyond belief. I don't even think it shows up in any of the main books, only in short stories.
Their are not many King Crabs running around though. At one point the King Crab was extinct, and it had to be upgraded to 'Functionality extinct' so people could actually play it prior to the Clan Invasion (And maybe the War of 3039).

I would try the Extinction Era and BattleMech Timetable pages on Sarna, they seem like a decent start.

OP I assume you mean MWO game
there used to be a small number of players that specialized in rare Mechs and took pride
in doing well in them
I think they are all gone from the game
I did buy a Trebuchet 7K just because it had some ballistic hard points
let me tell you a sucky player in a sucky mech is not a good combination
it would be a good idea to have a list of the worst Mechs in the game

Regarding the Champion, it's true that the majority of them were found in the ranks of ComStar and WoB. They actually had a lot of them. However, the FRR also had a number of them; enough for an FCCW-era RAT entry, so it wasn't a rare sight. Curiously, it's also on the RAT of the Hanseatic League...
During the War of 39, AFFS and DCMS had enough of them for an RAT entry, too. Only some of the Dracs' units were supplied by ComStar, the more advanced models.
Their number seems to have dropped, and in the FCCW-era only a handful Champions were left in most house armies. However, everyone had them. Yes, it's a rare Mech outside of ComStar/WoB but it's there.
