For Twitch streamers, those I follow mostly use OBS.

If you just want to upload to youtube, both nVidia (Shadowplay) and AMD (ReLive) have recording software for their respective video cards, which should require little effort to use. Shadowplay isn't too bad. OBS is a free recording and streaming software package that has loads of options and settings to support what you want to do, you just may have to put some time into figuring out those settings.

Last update was in 2013 so it's basically dead since 6 years. Don't waste your money on this.
If you have an intel CPU you can activate Quick Sync which uses intel's integrated gpu for encoding. I utilized this with OBS and was able to record MWO in (mostly) smooth 1080p on a 5 year old rig.

Shadowplay doesn't covert well in YouTube so if you like to upload videos there use other programs.

Not as familiar with it, however even with the settings above when I up it to YT it still comes out less than 1080. Any ideas that can help me?

Specifically during fights, just gets degraded.
That video (haven't check the rest), is running at 1080p for me, and there's a noticeable improvement when you switch back and forth between 1080p and 720p. I'm not really seeing any degradation during fights either.
But my eyes are **** so maybe I'm missing something.

Best guess is that your game dropped frames during combat, and the process of smoothing the entire video out to 60 (Either by OBS or youtube) caused some blurring.
I dunno, I don't do a lot of recording/uploading and I've gotten used to MWO's unstable framerate so maybe that's why I'm not seeing it.
EDIT: Slowed the video down to 0.25 play back speed during a fighting sequence and it does seem there are some dropped/repeated frames. Someone better at this sort of thing should be able to make a solid call on this.
