Sound off:
Does anyone use a Ryzen 2700X? If so, are there any problems I should know about?
Reason is my new system is a Ryzen 2700X and I need to know. Thank you.

I have a i5 9400F which is pretty similar to your CPU and I can the run on max settings @ 1080p and get 60fps consistently.
I have 16GB RAM and GTX 1660ti 6GB GPU to go with it.

https://cpu.userbenchmark.com/
Use that site to compare the PC parts and then decide. Just click on "Compare" located on the top right corner. Ryzen CPUs are good and cheaper than Intel CPUs. But rather than buying 2600x, try the 3000x series of Ryzen CPUs. They're newer and on the similar price range.

Plan doing just that. Upgrading to 3900X when the funds will allow me to do it.

Using a 3800x and everything is running fine. My real worry was the 5700 xt that doesn't have the best record with unreal engine games, but it is working fine as well.
As for a 2600 build just make sure the that for the memory you get some ddr4 3200 cl16 or better for the ram as the infinity fabric inside the processor scales with ram speed. Other than that you get more bang for your buck with AMD especially with some of the post black friday specials that have been going on (the 2600 is $110 at microcenter). Generally Intel still beats out AMD on single thread performance, but that margin is extremely slim.
On a side note the way userbenchmarks creates their rating is pretty much just single and quad core performance. So their rankings will be off for games like Cities Skylines, Forza, Witcher. etc.. or if you do any heavy rendering or video encoding.

I have a ryzen 2700x with 32 GB ram and a RTX 2070, initially I had some problems but this was due to a poor overclocking setup, since I reverted to factory standards, I am having no issues at all running all on max @ 2560x1080.
Getting between 60-100 FPS.
I hope that helps
