I'm not surprised MWO isn't on the list, honestly. It doesn't adhere to current software standards, so the lag introduced by playing over a proxy connection would probably kill it.

buying hardware a couple generations old is always an option. living at the cutting edge or getting sucked into gimmicks like huge cases, water cooling and leds on all the things add a significant amount to the cost of gaming. or perhaps people are buying laptops, which really limit gaming performance and increase cost. people running 5 year old middle tier hardware are still able to play a lot of games. remember a lot of consoles start out with really good specs, but after a few years they are quite obsolete yet people still play on them and enjoy the games.

None of the components you listed are the ones that are actually expensive.
Know what is expensive AF right now? GPUs, memory, and decent power supplies even at the low end.

mobos and cpus will get more expensive as well next gen
as both amd/intel are going LGA
so expect pc gaming to get quiet a bit more expensive

A current generation I5 intel processor on the cheapest LGA1700 board is still well below the price of the 3060. I don't know how the 3050 stacks up. A fast NVME, graphics card, ram, and a really good power supply are the most expensive components in my 11th generation I7 intel computer.
But I digress, I just thought the other persons post was funny because he literally itemized all of the things that are cheap (other than high end motherboards and the cases in the you can't afford it section of microcenter) I also stream games from my computer on a regular, and other than reflex based online games it's really good on my phone with a PS4 controller on a moving train. I'd pay for an actual service if there was a data center near me and I didn't already having a gaming computer.

a custom water loop would have easily added an extra $200 to my build. i looked into it. and glowey bits would have added an extra $50 easy. that would have cost more than my mobo. i would have also had to buy a more expensive case su such parts can express their gaudiness.
the price hikes are coming to an end. scalper prices have crashed as much as 30% since last month. prices are coming down and gpus are available again. id still wait on those, use your previous gpu until you can get one. miners are starting to sell off their cards, so maybe consider used (the fans will be shot but there is always the option of putting a water block on it).
ram, maybe not use ddr5, i used ddr4 instead and didnt regret it. scalpers jumped of ddr5 and you were paying premium memory prices for stock performance. or you can get more premium ddr4 and probibly net a performance gain.
what do you consider a low end psu, 1kw? you dont need it unless you get a higher end nvidia 30xx series, which is serious overkill. i got a 750w sfx supply, and it was more than i needed, and i got it at msrp because miners dont care about sfx. so long as you are not going after something explicitly targeted by miners and scalpers, you are fine.
keep in mind you dont have to break any records, you just need something that can outperform the streaming subscription service.
