Ghost Bears for me, Piloting a Kodiak 2
But if I were an I.S. pilot: I would love to fight Smoke Jags

The Clans (canonically) arrive at the Periphery in August of 3049.
The invasion proper begins in March of 3050.
MWO is set to start in Summer (northern hemisphere bias: summer is approximately June through September) of 3049.
The Mad Cat Mk.II isn't introduces until 3060, after 15 months of development.
So, if the Devs stick closely to the established BattleTech/Mechwarrior canon (which is their stated intent), it won't be available for another decade of game time.
As it appears that the game (or, at least, the ISN postings) is, for the most part, following real-time (1 day IRL = 1 day in-game)... it's going to be a while.
A substantial portion of the canonically-available Clan 'Mechs can be found on this page ("normal" BattleMechs) and this page (OmniMechs), though you'll have to go through and read up on each one to determine whether any given 'Mech is in production in the correct timeframe (pre-3049).
To answer the question:
Since the Marauder IIC and Ebon Jaguar won't be available for capture until ~3052 at the earliest and the Stone Rhino won't be too easy to find (much less capture), I suppose I would go after a Supernova or a Timber Wolf, if anything... though, I don't see myself leaving a perfectly-good (or at least feasibly salvagable) Marauder for it.
