Secondly, some people like to use multiple joysticks/mice- it would be good if in the control options there be the option to use and define controls for two seperate mice/joysticks- the players could then either set up one mouse/stick for one arm, and the other for the other arm, seperating the reticles and targeting for those arms. They then can set the seperate mice buttons to various different weapon groups (each weapon group firing at the reticle of the mouse it is assigned to)

The other stuff your talking about has not been confirmed yet, but others have raised it to the Dev's. I too am hoping they will make provision for it in the game either at launch or shortly after.
I've even been planning for a simpit, with additional smaller monitors to act as MFD's. Of course without the ability to take specific instrument displays and move them to a 7"-10" touch screen monitor, then it wont work quite like that.
But if your looking for multi-monitor support, I'm sure you will see this.
As for controller options, I'm looking forward to hearing what they have to say regarding that.

I believe widescreen resolutions (using Hori+) are native to CryEngine 3, but the method that would make it the best, multiple cameras, may be harder to implement. And harder on hardware, as you'd be rendering the game three times.

+1 on the option to have 3 camera views. I believe that would allow the displays to be spread out over an extended desktop, (vs an Eyefinity group that makes all three (or whatever) displays into one large virtual display. That could potentially enable multiple touchscreens to work, that wouldn't work properly in an Eyefinity group. Having seen the Atlas drop trailer, and the Hunchback cockpit images in the Media section... I think I'd prefer being able to use the touchscreens with the in-game provided displays, rather than trying to cobble something up in Helios. One can hope...

Since most video cards support dual monitors, I positively garunutee you many of the more hardcore CBT fans would hook up a second monitor for the purpose of always-visible tactical data.

Seperately the idea of allowing other info screens to run as seperate windows would be awesome too...even better if you could combine both. i.e. toss a couple cheap monitors in portrait mode on the edges of your eyfinity3 setup and and use them for additional info. I honestly have never tried this but I THINK eyefinity would let you run additional monitors outside the eyefinity group...er...maybe?
