Unfortunately, most of the heavies and assaults I really like won't be around for anywhere between a year and eighteen years - most 3025 'Mechs above 55 tons just don't fit my playstyle. Actually, most 'Mechs above 55 tons at any time in BT canon don't fit my playstyle; turns out that the Inner Sphere really isn't all that interested in designing their larger 'Mechs with rapid, hit-and-fade operations in mind, and the Clans aren't much better. However, I do have a few heavies and assaults that would work for me; here they are - post-invasion 'Mechs and all

Heavies
Ostsol (Reseen -6D or -8M versions preferred - they aren't pretty, but they're a lot better than the Unseen versions)
Summoner Prime
Ebon Jaguar B (ER PPC and a Large Pulse in each arm, 2 Medium Pulses in the torso, TAG, and an Active Probe)
No-Dachi

Assault
Gargoyle A or D
Executioner A
Occasionally the Mad Cat Mk. II
In my one departure from my usual recon/fast strike mentality, I've always had a soft spot for the Sagittaire

Slow heavies were common in 3025 because the IS lack of XL engines. Though even now if you gave me XL engines on heavies, I still prefer a light engine Heavy that goes 65 kph with JJs vs a Heavy that goes 86.4 Kph with an XL.
