Alternative uses for jump jets

Considering how jump jets put out a large amount of hot gas as part of their function; could you not use this in a dry environment to kick up an obscuring dust cloud? Or in shallow water create a steam cloud?

maybe even get some specialized jets just for this purpose

Well, I'm pretty sure that this was mentioned in the books and novels, how jump jets would kick up dust and steam. But, the thrust on them is powerful enough that it pretty much lifts the 'mechs off the ground immediately. If there was a thrust control in the cockpit, then maybe...

From a TT standpoint, my group and I have used rules for using jumpjets to start fires. Basically, the longer you feather your jets in or above trees (or other flammable terrain) the greater the likelihood of setting a fire.
And despite what people may say - when dealing with 'Mechs - infantry counts as terrain.

Hmm.............. howabout jumping and landing on someone and doing damage to their mech by just the sheer force of the impact. ;) It would actually be pretty funny to watch i think.

You seem to have independently developed the basic concept of a Death From Above attack. They're an established tactic, and function exactly as you noted. You jump and aim for whatever looks enemy. Generally it's quite fatal to the target and the attacker. Especially with a Highlander.
