I agree with Nik... to come up with the skins and chassies needed to produce true custom mechs is just not possible. Not everyone can be a truily special and unique snowflake. If you want this, you really want to play table top.
The Mechlab will allow you to customize a mech, hopefully. You should be able to determind your weapons, engine, armor, and other various equipment. Your Hunchback that you used as a chassie will still /look/ like a Hunchback, but the weapons will show the difference. For example, in the Atlas hot-drop vid, they had a 'Swayback' Hunchback that replaced the AC 20 with a bank of 6-8 Medium lasers. The AC 20 was replaced on the mech and you could see the actual weapons mounted on it.
We will get more info on the actual mechlab this month, starting today.

the swayback is an official variant. its not someone taking the ac hunchback in mechlab and putting lasers into the gun pod.
devs have said we will be getting variants and only be tuneing them, not replaceing ballistics with energy weapons.
(think of it like taking the stock atlas, swapping the ac 20 for a guass, upgrading med lasers to large, and adding some heat sinks with the saved tonnage)

Until we get to Omnimechs, at least. Then you better start praying, because people are going to be making some pretty silly customizations. >_<

I for one welcome stripping all the weapons out and giving mechs the biggest engine possible to turn them into bipedal battering rams.

For the most part i say no to non-cannon mechs. Like others have said there are just so may mechs already out there. Plus there are hundreds of mechs and variants that have not be in any of the games. i would like them to get a chance to be in game before non-cannon designs do. On that note i will admit to wanting to see what the devs could come up with. Maybe declare it a rare solaris custom built mech?

I believe by definition an Mech released by the developers is canon, however some take that to mean must have been in one of the books, in the rules set, or one of the technical readouts.
That said, I will customize, since very often many of the canon Mechs seem to have some silly or useless element added. Sometimes I think some weapons are added just so some ammo is available in the center torso to blow up. Or that the art director just rolled some dice since he couldn't think of anything and just couldn't keep things simple and effective.
Fortunately the hard-point system they've announced should keep anything too heavy handed (or just plain silly) from taking the field. For me, at least if I can't add what I need, I can at least strip something off an keep it from being a canon disadvantage.
