Okay, we've seen enough gameplay of the Atlas, Hunchback, and Jenner. But what about the others? How come we haven't seen any of the other mechs in action?

You could probably take guesses. Like the mechs not being ready at the time of making that gameplay footage. Or maybe the people playing for the footage thought those specific mechs would produce the best footage. Or maybe they were just like "**** that noise, I want to get in my hunchback" and someone else was like "lol me 2," and thus we ended up with footage of a hunchback shooting off another hunchback's arm.
If my first bit was correct about other mechs not being ready, maybe it's time for some new footage showcasing new mechs

Respectfully I'm going to have to disagree with the OP.
Personally I have not seen enough gameplay of the Atlas , Hunchback and Jenner. I could stand to watch a few dozen hours .
In another thread they already mentioned play with Catapults too.
There are any number of reasons .
Cheers

We have to wait for the second in-game trailer.

I think it's a combination of them not being complete, and wanting to save new footage for things like E3.

I would simply say:
Patience, they are doing ALOT of work for us.
When the open beta is upon us then we will see more I am shure, besides:
Why not keep the suspense up, it makes the payoff that much more worth it.

I'm going to guess no one has seen anything of the other mechs as they are not yet started, polished or finished. The devs have said they are only showing content which is ready to been seen and is in a pretty much finished stat. So you can assume anything you have not yet seen is not.

Yes, and to ad to that somewhat - if you've been following the dev posts around here you'll notice a trend: They might say that "x" is thier favorite 'Mech or they faced "y" in that match - "x" and "y" being the 'Mechs that have been shown already, i.e. the Atlas, Hunchback, Jenner, or Catapult (the last which they didn't show and may just have come into the game). This kind of confirms the theory that the other confirmed 'Mechs aren't in-game and show-ready.
