I'd stay away from XL engines in something that large, if possible.

Damage is all over the Torso, go Xl as it allows much more Armor. When you get single sided Damage stay Standard Engine.
It realy depends on the Playing style of the Stalker Driver how many Damage he gets in one Side. Personally i die often from Side torso blown, but always all other Torso armour already skinned... or deep red... So i take the 3 extra Tons of Armor slpa it on my Stalker and survive longer thanks to higher Speed and more Armor.
Other Stalker Pilots have Problems of weaving the Torso side to side and so very fast their torso is one sided killed.
So take some matched and look of you draw fire single sided or not. It realy depends how you play the Stalker.
When you spread Damage ( which is good possible as Stalker Driver) XL Engine is good, when not stay away.

If you are new to the game stick to non xl until you become a better piolet.
I have 3 stalkers, all with xl engines.
Brawler;
When in a fight you have to learn to expose your good armor to enemy fire while protecting your crit spots... all while keeping your guns on target. Once you can do this, throw an xl in.
Lrm boat;
Throw an xl in it if you need the weight. you should be far enough back from the main fights that if you are taking fire you are one of the last mechs standing. In this case your xl310 will come in handy for running (or trying) to cap. Extra weight saved by putting an xl in will also allow you to max out energy hard points so if you need to you can still defend yourself.

Agreed. In an LRMboat or sniper speed to get out of trouble or reposition are important. Sometimes an XL is better than a slow engine if you need the wright. But of course its preferable not to have the liability if you don't need to.
