I'm sorry if this question has been answered before, but:

Are the fights for a mercenary contracts scheduled for a set time? I.e. so that the defending corp can make sure they have members on line at that time to actually defend their planet?

Can mercenaries fight non-contract fights?

I think it's going to work this way: Your merc unit accepts a contract, you enter the queue, meanwhile a contract for a defence mission is offered to other merc units, one of them accepts, end of queue, and the fighting starts. Similar to how it works in LoL premade matches...

I'm only speculating here, as this part hasn't been answered, yet. I was hoping to get that information during MW-month part 2, but April focused entirely on the Mechlab.

Your second question begs the question: Why would a Merc want to fight without having a contract guaranteing income?

I was thinking of the situation where contract matches were scheduled. Then you wouldn't have anything to do in the meantime. The reason for thinking matches might be scheduled is that they mentioned merc corps "controlling" a planet after conquering it, and receiving "significant rewards" as a result of that. In that setting it would appear unnatural if they couldn't defend their planet themselves.
