A 'mech has several hit locations; head, center torso, left/right torso, left/right arms, left/right legs. Each of these have a number of critical slots (6 each for head and legs, 12 each for torsos and arms). These crit slots are used to hold equipment; weapons, engine, heat sinks etc. Some crit slots are always taken by stuff like gyro, arm actuators, leg actuators, engine, and some are open for additional equipment like weapons and ammo.

When a hit location has been stripped of armour, any additional hits to that location has a chance to destroy/critically hit whatever is in the crit slots in that location; hence the name "crit slots".

Additionally, things like weapons can take up more than one crit slot; a medium laser only takes one crit slot, but a large laser takes two. Because of this certain weapons can't be installed in certain locations (no AC/20 in arms with full actuators, no large lasers in the head etc).
