It is so booooring! The Stalker is the only mech released that have absolutely no extra hardpoints! 3H should get an extra missile slot in the ears as every other mech that comes with a stock LRM20 gets an extra missile slot. 5M could get an extra energy slot in center torso to give the option of having 2 medium lasers instead of 1 large.
In general... Stalkers need some extra hardpoints to make them different as right now we have 5S and variants that the 5S can copy anyways.

Yes, you can even take a testrun in the Trial Staker-3F. Game files show that -3F has about 85% twist compared to 60 default.
Edit:Read it wrong

When you say "yes" I'm not sure if you are talking about the Stalker-3H having 20 tubes per arm, and thus being able to fire the most missiles in one volley of any stalker.
I know the -4F has better torso twist range, That can be found at http://mwo.smurfy-net.de/ This is what I (and I hope many others) use for up to date info. Smurfy was nice enough to add torso twist already, it is great reference.

The 3h does have 20 tube arms.

The 3F has greater torso twist (better close up). The 3H has 20 tubes per arm (all others have 10, I haven't checked the 4N though) and makes the best missile boat (unless you want to put an LRM20 in the narc slot and use it like a minigun).
The 4N I have no experience with. If it has 20 tubes in the arm its a better hybrid direct and indirect fire variant than 5S etc. If not, well, not sure what to say on this one. The 5M has 5 missile slots, but one is a single tube slot.
he 5M does steaks better than others as a result, and if you like the minigun effect you can go for SRM6s (but if you're going to boat SRM6s and brawl the 3F is the best choice).
The 5S has dual AMS, ideal for carrying your team across the trenches. And they can protect your lack of torso twist.
I think its worth having a 3F for solo brawling and 3H for best Assault LRM support. Then depending on what you do in game, either a 5M or 5S (or both). Go for 5S if you play with a team to provide AMS coverage (and your teammates can cover your flank), or 5M for its unique hard point combination (just remember 1 missile slot is a single tube like the Raven).
This is just what I've come up with so far. In short there are more variables to a mech than hardpoints, and not all hardpoints are the same (eg missile tube number or CT energy slots that wont fit PPCs etc). It's just a shame they leave it to us to figure out a lot of this stuff on our own and don't just list all relevant specs with the mechs on the website (at least).
