Is there a way to know what part(s) take critical damage on my mech? I always see the notice, but never know what is critically damaged...

From what I've seen, the critical message is just there to notify you that your armor is low (red) in one or more areas.
As far as dying goes, you just have to pay really close attention when it goes into third person, and if you are really observant while playing you'll probably know exactly who did it and from where.

Ok, good to know about the critical message. Following up on that line of thought, does critical damage to certain components reduce the mechs performance? I know cirital damage to ammo is bad (or a gauss), but does a critical hit to the engine slow the mech at all? Or, if JJ's get hit, does jump capability get reduced? Or, sensors, etc?
Reason I was asking about the death thing is because a couple nights ago I felt like I got one shotted and didn't pay attention to where the damage hit me. I was moving behind a hill with the fight on the other side...and when I cam around the corner (I was undamaged at this point, keep in mind) I got killed instantly...no warnings or getting hit, just explosion. I suspect it was a headshot, but I didn't think one shots were possible.

No, the critical damage message informs you that a component has, indeed, taken critical damage.
However, since every component except engines (15) and Gauss Rifle (3) have 10 health, the item may not be destroyed.
If it took e.g. critical damage from a UAC/5 hit, it might just have taken 5 damage and still have 5 health left.
