Is there a place that has a break down of each mechs seperate components? I'm tired of shooting Atlas' in the eye and not damaging there head. I want to be a better pilot and not just shoot at a general center mast.

The best way to do that is to learn where the hardpoints are in different variants. For example, in the CPLT-K2 the best places to shoot are the stubby arms where you'll find some nasty hurt (2xUAC/5 or 2xAC/20), and in every Hunchback except the 4SP, the best place to shoot is the big hunch where the big guns on the Hunchback chassis are usually located unless the pilot is a tricky little ******.
Really, though, the best way to learn is just to play the game. Watch where people tend to group weapons in their 'Mechs, and respond accordingly. Every 'Mech is different, and you'll have to respond differently.
This online MechLab is a great place to learn where the hardpoints in different 'Mechs are and is also a great tool to build and experiment with 'Mech builds without having to spend unnecessary CBills.
Lastly, I will say that shooting at a 'Mech's head is usually fruitless unless you're rocking an AC/20 or lots of precision weapons and can headshot/alphastrike precisely and consistently.

Not that i know of.
I´d love to have a training ground where i can load mechs and test it out.
Till than that´s what disconnected guys are good for.
If you own the mech you can scroll over the mechlab.
Regarding the Cockpit of the Atlas - you can try aiming for the upper eyelid of the Atlas left eye (right from your perspective)

Not ideal, but when you hit a mech in game with lasers or lrms (cant remember if ACs do it too off the top of my head) the component/components hit glow for a short period after. If you pay attention you will see the outline of various components on different mechs. I haven't really seen this for headshots though (that I can remember anyway). Again not ideal but you may find it helpful.
