3 SRM6 to provide a punishing beat down when they get too close.
300XL to get you around the battlefield better than you could otherwise.

I like the idea, but I have to question the use of the 300 XL. The Stalker's side torsos are so massive that I have a significantly easier time shooting them than the center torso. Also, Stalkers have always struck me as mechs that do very poorly at close range compared to their long to medium range damage output. It might be worth trying a Standard engine, and bumping the LRM 20's with Artemis (or even 15's w/ Artemis) to really take advantage of that direct fire advantage you'll have with Tag and medium lasers on board. The SRM6's are a good idea as a deterrent, but if you introduce Artemis you could drop down to SRM4's for a tighter spread, or remove a SRM6 so the tonnage can go elsewhere. I would also consider swapping an arm-mounted medium laser with the center torso tag, so you at least have something to shoot in the event your arms are stripped - Tag's useless without your LRMs anyway.

Damn. I've run D-DC as missile boat brawler before, but this build has 18 SRM's it didn't have. This is a very powerful offensive mech, though I do question it's toughness - how does it hold up to being pounded? With a speed of 57 and an XL engine, won't you be very easily killed by anything with a bit of maneuverability?
EDIT: It also seems it would run very hot, doesn't it?

I've always considered that speed helps with a mech's survivability. The ability to get to position faster and move in and out of cover faster helps significantly with the ability to survive; just not in a manner that is as obvious as the negative of been blown up when any torso section blows up.
A lot can be done to mitigate XL's weakness... In my experience, only in about 15-25% of games where you get blown up with an XL would you have survived significantly beyond if you didn't have an XL (that is, you weren't in a bad position getting swarmed). Which isn't trivial, but it does mean you get all the benefits of an XL the rest of the time.
As for heat; as long as you respect the range bands of the weapons, it's very manageable. LRM20s are essentially 'heat neutral'. Once you start getting into that 200m range, start switching out for Mlas and SRM6... when you run hot, stay on SRM6... and 4xML can be employed to finish off weakened opened areas.

I'm of the opinion that the best LRM build for the Stalker is four LRM15s (with TAG), and four medium lasers. If you're using an XL then you might want to go full LRMs instead of dividing your missile hard points between LRMs and SRMs. The Stalker is much better at supporting the front line then being part of it. Even boating SRMs, you'd want to be patient and wait for the brawl to be in full swing before you go stomping in an tear them up.
At the end of the day it's a walking turret. The only chassis that's worse for brawling is an Awesome.
Not to say that the Awesome or Stalker can't be effective brawlers, it's just that there are much better mechs you could have for brawling.

I got LRM20 LRM15 with Artemis, 3x SRM6 and Tag. Standard Engine. Nice Long Mid Close - Range Mech, support needed when Lights close in. But keeping the fire steady from 1000 to 0m is nice i think. Damage output ok. Ammo lasts long enough (720 LRM, 300 SRM). SRM are good against lights if neccessary or to finish enemies.

The 5M is a pretty good brawler if you can keep people in front of you, but its limited torso twist is definitely a disadvantage. Actually, there are quite a few mechs that can brawl decently, depending on the situation (and your definition of "brawling").
