Honestly, I think it just comes down to it being lousy RAM. There
is no 814mhz JEDEC standard for DDR3, or any other kind of RAM.
I guess it's one more reason for me to just restrict my RAM purchases to G.skill

Could be overclocked FSB, hence the 814mhz, also possible the ram is not supported by the motherboard, and needs to be lowered.
800mhz = 1600mhz.
Drop it to 1333mhz in the BIOS (if you can), some motherboards prefer lower speeds depending on how much ram is installed. Make sure the timings are correct as well. (Should be a sticker on the RAM with like 9-9-9-24 or something)
When you install two different sticks, it probably drops them both to the lowest values, the default for the cheaper RAM, and runs correctly because of this.
When paired, either the timings are not correct for that particular RAM set or the Motherboard/Processor is having trouble reading it at that speed. Either A. Motherboard/Processor cannot run that amount of RAM or that brand at 1600mhz, or the timings are too low.
