But yeah easy way to find out, load up a mech with a crap ton of narc ammo and jump into a game and try to die. Don't have other ammo obviously.

Since NARC does zero damage....

Edit: Forgot five and two are different numbers. Also, I think it might be that much damage per round of ammo left... but I don't remember.

I believe the exact explosion damage can be found in the game files. It could even be that Smurfy has the info somewhere in his program. Or the Mechromancer tools have it.

Your best guess at testing the NARC Explosion damage might be to take a single piece of NARC ammo, put in a left or right torso, put no ammo on it, and then fire on it with MGs. This should guarantee the NARC will explode long before the MGs have destroyed the internal structure, and you will likely notice the damage spike as well.
