Since the 8V was rated the least seen in a poll I made, decided to challenge myself by using one.
This one.
AWS-8V
So far, it has been OK.
Worst map for some reason is Forest Colony and Forest Colony Snow.
Actually does well on open maps so long as I use cover to move in sometimes firing the LRM15.
Could serve as a base guide for someone to modify if they want to try an 8V.

This looks Ok as a starting point for an all Range Mech.

I like your general approach for the 8V, but If I were doing one like yours, Op, I would make the following modifications:
248 standard armor
endo internal
300 standard engine
17 double HS
1 LRM15 (2 tons) - RT (RL)
2 SRM6 (2 tons) - RT (RT)
1 ERLLAS - LT {could use LLAS instead of preferred)
3 MPLAS - LT, H, RA
1 AMS (1 ton) - RT (RT)
CASE - RT
While I prefer Artemis and an extra ton of each ammo type, I gave those up on this build due to space and the overall intention of the design. Since you had a standard engine, I stayed with that and assumed you wanted the survivability that it provides over the XL. But to have the benefits of that, you need to be sure that losing one side of the mech still leaves you with a good combination of weaponry.
On yours, if you lost the left torso, you also could no longer use the RT's missiles since your ammo was gone; and if you lost the right, you lose any long-range ability (not to mention still carrying around all that dangerous ammo that has now become nothing but a liability).
On mine, if you lose the left, you still have the LRM for long and 2 SRM6 plus 2 MPLAS for short; if you lose the right, you still have an ERLLAS for long and it plus 2 MPLAS for short. This sort of combination is the hallmark of the great assault designs - lose half the vehicle and you're still weilding the firepower of a medium mech at a time when other wounded mechs are trying to get by with almost nothing. Plus, this design also begins the fight with 2 long-reach weapons covering direct and indirect. I suppose fans of TAG might switch out the LT medium for it, but I don't think it fits the scheme as well.

Haven't tried it since the missile nerf, so I'm not sure well it works now. Pre-nerf, it had a good mix of long and short range punch.

I used to have an Awesome 8V. I found it somewhat hard to work with, but I'm willing to try it again.
I ran a configuration with 3 PPCs and 3 SRM-6s, but then switched to 3 SRM-4s for tighter missile spread and some extra DHS. I think I also ran a standard 275 engine in it.

Got mine with all Basics, might just run an 8T as my third to challenge myself.
Finished with decent stats for my gameplay.
Note - on that list, the COM-3A, DRG-1C, STK-4N and TBT-7M were all running Trial Mechs to grind, only the other 4 are mine.
The Hunchback and AWS-8R were played a lot more before they created those stats pages.
