I notice there is two numbers on items. A buy price and a sell price. I however don't see an option to sell a thing. How can one sell items they don't need to fund equipment that they do?

You have to have a 'Mech that you can equip the item you want to sell. Otherwise it doesn't appear in the list.
For instance, if you want to sell a missile launcher, you cannot sell it if you have an all-energy 'Mech (like a Jenner-F) chosen.
You go into the Loadout screen, click on a body part that contains the correct hardpoint for the item you want to sell, click on that item in the list, then click the Sell button in the middle of the screen at the bottom.

Yeah, it'll be changing in U.I. 2.0, but that won't be here for a while yet.

For what it's worth, I did see a topic that encouraged keeping all sorts of equipment in case it gets buffed.

Keeping everything, and every mech, is one of the best pieces of advice I've gotten.

I will second (or third?) the advice to never sell anything.
Engines are super expensive to buy again and you may find that you come up with a build where that 320XL would be perfect, but you need to sacrifice something good to mount the 325XL (this is a personal experience). Or you may want to try a new weapon loadout, but don't want to spend the cash on an experiment. Once you have an inventory full of stuff you can try a lot of different things and make each mech just perfect.
The only time I sell anything is single heatsinks (be sure to sell them before upgrading) and medium lasers once I have more than 12 or so lying around.

Sell medium lasers, only keep ~30 in your garage.
