Ultimately, a "zombie" is when a mech has been destroyed enough to look like this:

for **** and giggles and the purpose of this thread we can say there are 3 types of "zombies" in MWO: vampires, zombies and the undead. but they ALL fall whether you remove the head or heart.
some have different ideas of a zombied mech because they know exactly where weapons are on a chassis they're chasing, or they've targeted and know his weapons are destroyed/empty.
A defenseless mech is undead, harmless and ought be running for a base or jumping on a grenade for his brothers.
Vampires can be more nasty than 'zombies' because they frequently get 2 hard points in that center torso. Furthermore, after loading an engine in the CT there are still 2 slots remaining for that hard point. This allows someone to use a LPL or a LL or the missile equivalent. If they have 2 hard points in the CT they can use 2MLs, 2MPL, LPL, LL or the missile equivalents and so on. Very nasty, not to be underestimated when someone's aim is true. Missiles run out though making energy hard points nastier, imo.
Zombies on the other hand have only one slot in their cockpit limiting the weapon up there. But there's lot's to be said for a good ol' medium laser.
Note: mechs i call 'zombies' (it just so happens) do not get a missile hard point save for the mutatantzombievampire CTF-4X
I didn't find a ballistic hard point on any of the mechs CT or cockpit, but that AWS-9M could make a MEAN zombie!
mechs not mentioned have no weapons in CT or cockpit and are undead in zombie mode. correct me where i'm wrong, crude but effective:
