I decided to take the Metal Salad for a spin tonight, simply because it looked like a hilariously fun mech to play.

Turns out this thing is actually not bad. I'm trying to figure out why I am doing so damn well with it, and part of it comes down to the sheer number of new pilots out there. Now, my heavy Elo might not be all that great (until now with the steamrolling I have been doing with this setup), but there is a very large number of stock mechs out tonight.
Do new players just come out late at night, or are there simply less vets? I played with a bunch of guys from the forums, so I'm ready to believe there are a decent number of new players out there (or a LOT of old players making new accounts)

I've noticed that the matches later at night are of a different flavor than the matches during prime time about the time the east coast starts getting off of work (and wrapping up a few hours after the west coast is settled in for the evening).
I've noticed a lot more min-max builds during prime time with pilots who are competent at using them - whereas the later night groups seem to prefer more mixed builds (probably because they are more used to launching into any match as opposed to trying to find one game type or the other).
It's not uncommon to drop with a few of the same players a couple times during the night.
Prime time 'killhouse' game-types tend to be more sniper driven; while resource gametypes tend to be more varied but the matches tend to be much lighter with only one assault on each team (if that).
I'm not sure that you can say one group is really better or worse than the other. Games are more fluid and dynamic at night (usually) than during prime-time, where you don't want to stick your head out and wake up three months later, still smelling like ozone from all the PPCs you took to the face.

I am seeing WAY more trial mechs dropping into games where ELO would suggest they do not belong (and before last patch this was the case)

If by 'newbs' you mean that perhaps the people who log in at nite have finished work and finally have a few spare minutes to play. Then probably.
Not everyone can sit in front of a PC for multiple hours during the day. I, of course, envy those who can, but eventually 'real life' catches up with you.

It was like 1am PST. That's well past the "finished work and have a few spare minutes" time. Maybe for you that's not the case, but for most it is. The east coast and Europe are, in all likelyhood, fast asleep at that point.
And I would be very surprised if I saw a Founder rocking a stock mech for anything other than teh lulz

Not all of them were trial mechs even. One that I happened to notice was a stock Highlander.
