I have 1 master module slot for my Centurion, can I only have 1? Or do more open up when I've filled1?

When you Master a variant, you get one additional module depending on how many you start with. So, for example, mastering a Raven 3L will get you 4 module slots (3 normal + 1 master)

One more thing, lets say I add in advanced zoom but later want to change it so advanced sensors can this be done or is it stuck with advanced zoom?

It is just like normal slots in the mechlab, you can remove, store, sell and buy modules in that tab.

Celtic, quick overview on modules:
1. Unlock with GXP in pilot tree (I think it's the pilot tree)
2. Purchase with C-Bills and equip to mech in the mech bay (module tab)
3. Many people will un-equip and move modules around to other mechs since they are pretty expensive
As for slots, I think that was already covered fairly well.
Oh, and I think that I read somewhere.... in the future consumables will have their own slots and not take up a module slot.
