I am tired of assault maps where the 2 teams barely see each other.
Why not lock capping untill atleast 8 mechs have been destroyed?

because of the long cap times now.
Literally on Tourlamaine, you can start capping(with cap excel) while the rest of team is engaged, they have time to pretty much eliminate the team and get back to base before you can cap.
The mere fact you miss means you walked all the way to the far side and no one on your team bothered scouting AT ALL.
If you have to wait till 8 mech are destroyed no reason to even bother having capping in, in fact I would even say it's now a waste with even one capper.
