There can be only one

SmartCat! Go Missiles or Go Home!
Someone will be along shortly to advocate for an Awesome, Stalker, or one of the other Catapults

If you can afford one, the Cataphract 3D with 1 Gauss and 2 PPC is pretty much the gold standard. Highlanders and Victors are also really good right now IMO.

That depends what you look for:
A good variant is the 6LRM5Artemis Catapult A1. My teammates do a lot of damage with them.
I use a rather unusual choice: 2xLRM15Artemis, TAG, LL, BAP and around 1500ammo in a Quickdraw.
Should you prefer sniping, a Highlander with 2xERPPC, 1x Gauss and some SRMs might be your Mech.

There's a number designed for the purpose.
Heavies:
Catapults in general are intended for ranged support. The K2 for direct fire, the others for indirect fire.
I don't have many videos of this, sadly.
Cataphracts can fulfill the role but are designed for urban environments.
Jagermechs are designed as anti-air mechs. Here they work very well as fire support, particularly a rig with 3 or so AC/2s or 2 AC/2s + 2 AC/5s on a macro.
A Dragon can also fulfill this role as can a Quickdraw, but this is not recommended until you are vastly experienced as these are the "Challenging" mechs to use for those wanting tougher matches.
Assault:
Stalker. 2 8-man premades featured.
There is the Awesome which works best as support only. Make use of those huge arm shields to soak up damage. This is a "make my game challenging" mech. Be warned.
Victor is actually not meant to be support but it handles the role very well. Direct fire works well. I chose LRM support for this.
Highlander. If the Victor is the big brother to the Centurion, the Highlander is the big brother to the Victor.
There's also the Atlas.
Mediums:
The Kintaro is a recent one, but wait until next week.
Centurion is more of a striker but it can provide fire support.
as can the 4J Hunchback.
And if you stuck with the videos so far, here's a reward. A raven perched on the shoulder of an Atlas with an AC/20. SQUAWK! (And I'm not even with Word of Lowtax, damn squawkers).
Note: I was warned about doing this as it causes hit detection issues. Don't do it. Instead, laugh.

The Kintaro has some issues that makes it particularly easy to kill, hence why I'm stating to wait until next week. Specifically wait until September 3rd.

And if that epic post by Koniving doesn't answer your question, then nothing ever will!

Just about every catapult is a long range fire support mech. The A1/C4 are all about the missiles, the C1 can provide missiles and long range direct support, and the K2 is a direct fire support mech. The mech is flexible enough to have multiple uses, but is not built to brawl really well (though even an SRM Splat cat build can be effective in the right hands).
THe Catapult is probably a good mix of flexable yet singular of purpose (support) and fits in a nice price spot, and can use XL or standard engines.
