I do think that the catapult hit boxes are soon to be changed up/reviewed. Can not find the thread atm though so cannot link or quote the exact date this will happen but the head hit box was mentioned.

Do not use the chassis as a stationary sniper, you need to keep moving. By the way, walking straight up a hill, firing, and walking straight back doesn't count. You need to keep moving, and you should be fine.
If you are LRMing, I would sit behind a hill out of direct fire and lob missiles over. Rely on your team for hard lock.
P.S. The Catapult is EASIER to headshot, but not easy if you play it smart. just my opinion as a person who pilots this chassis quite a bit still.

Twisting and turning.. even when moving forward helps.
The head will get a 20% reduction which will help.. It honestly won't make a difference to the center torso because it is so huge already. The distribution of lower hits to the legs instead of the CT will help there. Just make sure to increase your leg armor.
Use your JJs! You can use them to jump tightly around a corner. People tend not to expect that.

The CT is what relegates the Catapult to more of a support role. Either hanging near the back with ballistics or lobbing LRMs. Even with my Cat C1, I use dual LRM10s and only use the LLasers and MLasers for defense (or attack if the enemy is wounded and I smell blood

The CT makes frontline brawling VERY difficult to pull off (especially with the SRM hit detection issues). A Cat C1 with 2 SSRM2s is not enough firepower and SRM4s or SRM6s won't register properly.
