Off the top of my head, the only mechs that I can think of as extinct are the AWS-8V, COM-3A and HBK-4J, though I'd guess there are others (I'm a bit fuzzy on the CDA variants).

We had a game last week with two quickdraws Vent came alive with speculation and loud 'oooo!'s and 'aaaah!'s.

SDR-5V, JR7-K, RVN-2X, TBT (except maybe 7M), all Dragons, all Awesomes, STK 4N/5S, all Quickdraws, VTR 9K
Soon extinct: all Locust

The other one is a super deadly LRM boat w/ Artemis, TAG and 2xMLs.
I NEVER see Fangs out there.

On the plus side, running an extinct mech make you quite unique on the battlefield

Mediums: Trebuchet. I can't even recall the last time I saw one, and if they ever do show up in battle, they die super-fast things to their grossly oversized frames. Note that I suspect the Griffin is on the DOA list thanks to lacking ballistics and having all its weapons dependent on the right torso, but that's just a guess.
Heavies: Quickdraws are basically dead. I haven't seen one of these oversized things for weeks now. Dragons are rare, but they do seem to have a "cult following."
Assaults: Obviously, the Awesome. I still do see them now and again. They are still functional as LRM boats, though Stalkers do almost everything better and even certain Battlemasters can handle LRM's better. Awesomes do have a "cult following" of folks who are determined to win games with them.

My pick for extinct variant: TBT-5N, haven't seen one of those I think ever. What's the term for a species that just never existed to begin with?
It's either a 3C without the speed boost or a 5J without the jump jets, depending on how you look at it. Since there were 5 TBT variants on release there was literally no reason to buy the 5N. And, since TBT's are pretty much universally terrible I rarely see any of them at all, much less the completely obviated 5N.

Last time I saw a Treb was when I dropped in one. I got up to a 1.3 W/L over 900 matches or so and then the PPC nerf. I did need that 1, yes 1 ERPPC for 0-1600 range. I never had more than 3 weapons unless I was LRMing it. 7K can be useful. But it was sooo much effort. Wins fell with nerf. I can do the same in a Quickdraw and live much longer, let alone a Pract, assault or any other heavy. Poor mediums.
