Another fun mech I use is a reven 3L with 2 SRM6, and 2 Medium lasers. Use the SRM6 in our narc tube like a close quarters full auto AC2 and you will have a blast.
And lastly... use just about any commando and your face will hurt from smiling, as you matrix your way across the battlefield.

I've got a k2 with an AC/20 on one torso and PPC on the other. ML in the arms, MPL in torso with the AC/20. It's LOTs of fun, and diverse.
It's "alternate" build is dual AC/5.
Probably more effective with 2 ERLL in arms... but just not as much fun. I bought the Jester cause I liked it, but had to switch up the K2, which inspired the ballistics. I did spectate a dual AC20 K2 once.... his was SLOW... not sure what motor he was running. NO other weapons.
I also have a C4 with 2 MLs, 1 LRM10, 1 LRM15, and 2 LRM5. Basically, an alfa LRM shot, then staggers itself. Fairly screwed once you get up close, so have to play carefully.

heavy: JESTER, I find it a fun fast mech to play.
Assualt: Misery. its slow but tough and fun, besides it has a ballistic hardpoint which can sometimes catch people off guard when they see you.

The Centurion and SHD fit that role and i played also a Cicada 3M quite a while (ERLL(exPPC), 3xML, MG).

HGN-733P: AC20 + 2 PPC
40 alpha, not quite as lame feeling as playing the poptart gauss build, you can't exactly brawl but you can alpha like a champ without overheating the hell out of yourself. Probably my least played of all mechs, but I still have fun taking it out once in awhile.
JR7-F: 6 Medium Laser
30 alpha and great sustained DPS, solid heat management, high speed, there's nothing to not love about the Jenner-F (other than its horrible core hitbox, but it's mitigated by the fact that you're a light and you have tiny torsos)
CPLT-K2: 2 ER Large Laser + 2 AC5
One of the gold standard sustained DPS builds, probably my most successful mech overall. You can run the biggest XL possible with these weapons and not sacrifice armor. I've had a lot of 1k+ damage games in this. You can run the same build in a Jagermech or a Cataphract, I just like using the Catapult because it looks cooler.
AS7-D-DC: 1 ER Large Laser + 2LBX 10 + 3 SRM6+Artemis
Brawls like a champ and has a long range weapon to reach out and touch people with while advancing to SRM range.
BJ-1X: 6 Medium Laser + 2 ER Large Laser
It's like a giant Jenner that can hit people at long range, runs really fast and has a hilarious/creepy walking animation. It's not nearly as heat efficient but when you alpha people I'm pretty sure the lasers can be seen from space (and 38 alpha is nothing to sneeze at, especially from a mech that goes almost 120 when speed tweaked). Kinda wish it had some jumpjets, but the speed helps make up for the loss.
QKD-5K: 3 PPC
I have no clue why people **** on this mech on the forums so much, the Quickdraw is a very neat chassis, sure it's very large for its tonnage but it has excellent hitboxes for using an XL (and with one, it can go over 100km/h), giant arms to use as shields, giant leg hitboxes and jumpjets. It's the most durable heavy I've ever played (I've also used Cataphracts and Jagermechs before but have sold them for not being cool enough) because it's so easy to spread damage and the core/torsos are so small. 3 PPC gives it an instant 30 alpha from range, you can chain fire, poptart, or use your speed to flank with ECM support.
STK-M: 4 Large Laser + AC20
Laser stalkers are cool, slap an AC20 on one and you've made it doubly cool. Really good at dealing sustained damage and taking a lot of punishment. People moan about how easily you lose your torsos, but as a Catapult pilot, let me say, it's better to lose a torso and be walking around at 40% health than it is to get cored at 60% because you have a giant core hitbox. The Misery also has room for a large laser in its core, which lets you zombie it up if you find yourself losing your arms (as is prone to happening on stalkers). I usually don't die until I'm below 30% on this mech.
Some other builds I'd like to try:
BLR-1D: 4 Large Pulse Lasers + 2 Machineguns
RVN-3L: either 2 ER Large Laser or 1 ER Large Laser + 2 Medium Laser + 2 Streak SRM.

I usually do terrible, but going fast with a shotgun, shotgun missiles and then my green scalpel lasers is just alot of fun.
