Makes me go back to the wonderful tutorial we had in Quake (hint: we didn't). Or in Street Fighter.
Did you try checking the options first? All the different keys are listed under "controls", and some of your questions could have been avoided if you simply took the two seconds it takes to read that the "R" key is bound to targetting enemies, and thought "gee, I wonder what that does?"
Mechwarrior follows battletech rules on "killing mechs", and to do so, you must acomplish one of 3 things: Destroy the center torso, destroy both legs, destroy the head. Additionally, destroying either side torso will take out any mech with an XL engine in it.
Each section tracks damage separately, and the x% value is simply an overall measure of structural integrity. It is perfectly possible to kill a mech that is still 60% operational by doing one of the things above.
As for "how do I go out and kill enemy mechs easily" - you don't.
