I'd like to see something outside my cockpit window other than just the background weather. So far the game will not render mechs, buildings, or anything other than smoke trails and atmospheric/environmental effects.

Or a military hat like a beret, nothing like a helmet but more the formal stuff.

Deodorant or air freshener. Your Awesome's cockpit is gonna get pretty ripe after a match in Caustic Valley.

Alternate pilot clothing besides the bodysuit, like a Hawaiian shirt and shorts, maybe house themed bodysuits or even customizable suits.

Magic 8 Ball that randomly says things would be very amusing, especially if they were a mix of insults and cheering on.

Christmas lights would be hilarious.
Assorted bobbleheads perhaps?

User uploaded picture in a preset frame off to one side would be awesome. As well as user uploaded/game music player, which could take the appearance of a large stereo system like that of heavily modified cars?

Not sure if anyone has said it already, but a sidearm would be good, for grabbing before ejecting.
Katana or similar within arm's reach just in case.

Japanese themed monster toy or bobble head on dash (Godzilla is my personal favorite, Mecha Godzilla would kick *** too.)

Customisable posters, window stickers, etc. So, we can place them in cockpit and then upload an image to put in them. So, that'd cover pin-ups, mech posters, etc.

Also, random bits like crisp wrappers and half-eaten sandwiches on the dash would be entertaining.
