As far as suggestions, i'd have to go with a personal picture (or rotation of them) that can be 'uploaded', with my definition of uploading being a special folder in the game-installation directory. Randomly rotates every 5 minutes, or each new battle.
I'd also love to see a personal weapon for defense along one side, with a box of ammunition for it. Rear-view camera displays (that work?! nowai) would be nice too.

I don't think these have been mentioned:
- A small dog (you could chose from a few different breeds) that tends to jump up and put his paws on the screen and bark at enemy mechs when they get close.
If your mech overheats, have the ability to grab your pistol, lean out the window and start blasting at the bad guys. The bullets can actually plink away on the other mechs (if they're close enough).
Plus I'll add my agreement to the following which most (if not all) have already been mentioned:
- Uploadable images which can be displayed as tattered pictures stuck on the dash
- Customizable music player
- Editable notepad that displays in a handwritten font
- Coin holder for toll booth
- Handicapped parking placard, H.S. graduation tassle, Prom garter
- Sun visor (that actually can be flipped down)
- WD-40
- Duct tape
- Bumperstickers on the outside
- Bonsai
- Fan

In game radio station(s) would be cool (maybe...). Solaris matches on one channel, tunes from Mechwarrior 2: Mercenaries on another... Newsfeed.
I'd want a brass sign on at the top of the cockpit with the name of my Mech on it. Or a motto ('Where ever you go, there you are' in my Hatchetman, obviously).
Aerotech themed Battleship board ('You sank my Overlord').
Something hologrammy? I mean, there's holograms in Battletech so... that? Maybe the uploadable picture but as a wee little hologram. This is the most I've ever said 'hologram'.
Mug. 'I Hate Mondays'.
Bobble Urbie makes me happy.
Canon postcards. 'Hello from Tharkad', 'Tranquil Tukkydid' etc. etc. Canon stuff generally good, in universe products and references.
Unit logos, rank insignia, medals and all that jazz a must.
More dangly things (ahem), like dream catchers, Elvises, Jumpships.
Singing Diamond Shark? No... ok.
Big red button.
Little cherry top light.
All depends on the sort of space your cockpit is. If you can look around a bit, there are obviously more options... But the idea of investing a bit into the look of the cockpit is appealling. Might even keep me in the same Mech for a while...

As to why people PLAY it, the simple answer is that IT IS A GAME.
If you are taking it seriously, then you are totally missing the whole point of the exercise.
You go ahead and run with your funereal black mech and your **** retentively perfect cockpit, and have your head explode with frustration when you don't get as high as you think you should on the leader boards, and I will be actually HAVING FUN getting my arse shot off in my Smurf blue mech with an Urbie bobblehead on the dash and an uploaded photo of my children "taped" to an unused cockpit monitor.

A thumbnail-sized window into which we could upload a picture (family, pet, whatever your pilot is fighting for). You wouldn't need to worry about inappropriate images being uploaded, because the only person who would ever see it would be the pilot himself. In fact, that very privacy would make it less interesting to the people who would abuse a custom decal uploader. You know what I'm talking about.
Personal junk like rosary beads or fuzzy dice is all well & good, but I wouldn't want it cluttering my cockpit. Especially if it had any kind of animation!
