Or just the Prime (with the C-Bill Boost) and then build whatever variant you liked best?

This will change with the Gargoyle D (2E in CT) and the non-Prime Ice Ferrets (each have 1E in CT).
edit: I did level all three Warhawks through elites, but that was to meet the 3/3 weight class requirement, so I'd never have to do it again.

Same lol. I literary lose sleep over unfinished projects no matter how small or insignificant they are.
My OCD is nowhere near that bad!
More like an annoying itch that can be ignored if needed (or can be easily scratched at times like this)

This isn't correct. You need to have 3 variants at that weight class to fully master one. So you can, for example, just get basics in 3 Timberwolves, sell two, and master the third if you have two other Heavy mechs in your stable (including IS mechs) that have full Elite skills.
Only unlocking Elite requires three of the same chassis, not Master.

This is generally what I do. Lets me keep a couple different builds I like active at once, so I can switch builds without having to **** around with the mechlab - particularly valuable when grouped.
With my IS mechs, I never sold them because you never know how future game mechanic changes/balance changes may make an underperforming variant spectacular.
With Clan mechs, though... The pittance you get selling them isn't worth giving up being able to maintain 3 different builds; and even if I were to sell, there'd generally only be one per chassis I'd sell. This, because in almost every case the mech with a unique CT hardpoint is not the Prime mech, but I'd obviously keep my Prime for the cbill bonus. So, if I desperately needed to sell mechs for some unforeseen reason, it'd be 1 per chassis max.
