There is no canonical configuration of the Gladiator that has both a left hand and a right hand.
Prime, E, H, and K have a right hand, but no left hand.
D and P have a left hand, but no right hand.
The remaining configs (A, B, and C) have no hands.

But with how Omnimechs work (yes, even in canon), a MechWarrior can MAKE such a loadout.
"Stock configurations" are really nothing more than "guidelines" for an Omnimech build.

While a valid point, that does not answer SgtMagor's question.
There is no canonical Gladiator configuration that has both hands.
However, MWO includes the Prime (RH only), A (no hands), B (no hands), and D (LH only), so it is possible for a player to make a two-handed Gladiator in-game with minimal effort (right arm from Prime + left arm from D + other OmniPods to taste).

I am pretty sure somewhere in canon someone has an Executioner (Gladiator to you filthy surats ) with two hands.

Watch the Hero Daishi be VSD's "Prometheus"...
Would make sense... if the Prometheus wasn't Inner Sphere.
You know what would be cool? If the Prometheus counted as IS mech in CW...

My money is no longer mine. It's in a happier, more Warhammery place. Now, Phoenix Hawk next, yes? Yes, of course.
I assume Bishop still hasn't stopped going "SQUEEEEEEEEEEEEEEE" over the announcement yet since he has yet to post about the Hammer.

There's only 2 Quads in-timeline, and they'd need as much or more work than the Clans took to implement.
We need to hit around 3100 for it to be really worth adding in game.
Nothing wrong with quads old boy.
I have some and want more in TT.
3054 gets us the Tarantula for example.
A light 'Mech that can survive losing a single leg gains a great deal in the MWO battlefield. There's also two Clan quads at this point as well.

Marauder -- CHECK!
Warhammer -- CHECK!
Archer
Rifleman
Longbow
Crusader
Phoenix Hawk
Valkyrie
Stinger
Wasp
Still cautiously optimistic, but this represents a new era in Battletech, victory over HG!

Sorry I've pretty much stopped playing but kept an eye on the forums and development. What happened with HG? Did they win a lawsuit or did they just stop giving a crap about them?

I will defer to those who know more details. Simply, something went down between HG and Catalyst after the HG/Hasbro battle and the outcome was Catalyst unveiling very similar reseens. This has given PGI whatever ammo they felt they needed to move forward as well.

So, this is the original list of Quad Mechs we can get in 3052 I made (no longer have the files, CBA remaking just to remove the crossout lines):
3 Clan Battlemechs (now possible), 1 LAM (still not possible), 2 Reseen/Unseen (Now more possible) and 1 extinct mech.
So that gives us:
1-2 IS Assault (2 Variants each)
1 IS Medium (2 Variants + Hero)
1 Clan Assault (2 Variants)
1 Clan Heavy (2 Variants)
1 Clan Light (2 Variants)
Now, PGI has shown willingness to ignore the variants and just create -P variants now, so that's less of a hurdle, this is true.
And we're getting Unseens now.
But it remains there's still a total of 5-6 maybe's at this point.
Enough for 1 pack, if it's mixed clan+IS, or 2 if they only do 3 per-pack.
(Alt, release them all individually)
And that's for more work than the Clans took.
With a completely new walking system, turrets, new game mechanics, lots of work, etc.
With an upper limit of available mechs equal to just the first Clan Pack, and all but 2 of each mech needing P variants.
Full List, all quads:
If you go to 3060, you go up to 12 available mechs total, with a single clan battlemech having 3 variants by default.
So by 3060, it's a... maybe, but there still remains a hard cap of 12 mechs, but still only 3 Clan Battlemechs.
So max 3? (2IS, 1 3 man Clan) packs.
(Clans already have 4. IS 6 active, 2 gone, plus all the singles.)
By 3070, Quads have started to go through a revival. We go up to 14 total. Still max 3 Clan though.
So if we jump to 3070, that's 14 possible, Still 3ish packs worth, but now with a 2 Mech Add-On (or singles).
By 3080, the revival has been going a little while.
We get two more for 16 total.
12 IS, 4 Clan.
4 Full Packages, numerous P variants required, no more releases at this point.
So it'd take it being 3080 and the introduction of numerous weapons including HAGs, mixtech and IS ER weapons, for it to be a viable option.
Again, don't get me wrong, I want Quad Mechs.
I own some and want more in Tabletop (I'm limited to 3055 outside of display with our group as well).
But I just don't see it happening.
The cost vs return just doesn't seem worth it, with the sheer amount of work needed and the absolute cap on Quad Mechs by era.
That said, PGI have already done things we thought they'd never do, such as introduce their own P variants, and challenge HG's shenanigans by releasing the Unseen, so we can dream.
