I've never had corn with rum or other spices than butter...and I live in Iowa lol.

While the corn is grilling (or roasting in the oven if you're in a pinch), I like to make a nice compound butter with chili powder and lime juice, spread it on the corn right out of the husk, and sprinkle a bit of cojita cheese.
