Here's everything that is more or less available for speculation.
Light
Hornet (20)
Thorn (20)
Dart (25)
Mongoose (25)
Raptor (25) (If they're doing IIC mechs that means IS omnis are fair)
Falcon (30) Essentially Wolf's Dragoons exclusive at this point in time.
Firefly (30) Extinct until Wolf's Dragoons reintroduced it. Not sure of overall availability.
Hermes (30) Close to speed cap stock.
Javelin (30)
Ostscout (35) Highly unlikely. A single energy hardpoint.
Medium
Assassin (40)
Clint (40)
Hermes II (40)
Sentinel (40)
Vulcan (40)
Whitworth (40)
Wyvern (45)
Bushwacker (55) Only 2 variants available as of 3053, but the S2 could be built with what we have.
Dervish (55)
Hoplite (55) Extinct until Wolf's Dragoons reintroduced it. Not sure of overall availability.
Heavy
Champion (60) Who wouldn't want a champion Champion?
Grand Dragon (60) Evolution of the Dragon. Could probably be folded into it for skill trees. Mauler and Daboku (MX90)...
Lancelot (60)
Ostroc (60)
Ostsol (60)
Excalibur (70) Noted as exceedingly rare.
Guillotine (70)
Flashman (75) Only two variants. Then again, Mauler was near the same...

Hatamoto-Chi (80)
Spartan (80) Scary rare, as in two dozen in the entire Inner Sphere as of 3067.
Thug (80) "Better" Warhammer replacement.
Cyclops (90)
Annihilator (100) Wolf's Dragoons mech.
Devastator (100) Two variants, but the DVS-3 could be built with what we have.

4 x AC 10
2 in each arm.
7 slots each = 14.
the arm can't hold more then 10 max and that' just with shoulder and the upper arm actuator.
This is the main ones in timeline...

Only one variant in 3053, next is available in 3056, then 3058. Looking at the tech we could build all of them except the 6T, total of 4.

Well, the IICs don't have enough variants (except for Jenner) for the timeline either, but they're coming.
So PGI will either get rid of the downright moronic 3 mechs to master rule... Or they'll make them count as the IS variants in terms of mastering... Or make up variants, which is also stupid.

Does anyone know what mech fits this criteria? I have been having trouble finding one.

Falconer?
A fast, jump capable 75 tonner with (by default) 5 energy weapons and 1 ballistic (1 ER PPC in one arm, Gauss rifle in another, and 2 medium lasers in each torso).
The problem is that there's basically no other MWO-compatible variant for it (the only other variant is in during the Jihad) and even this one is 1 year out of the current timeline.
Can't really think of anything else, that would match your description.

If you're willing to exchange the ballistic arm for ECM, the Penetrator is the way to go.

No, needs a Gauss.
Falconer is awesome though!! 3053 is next year so that works out, and PGI can make up other variants. Boom! done! Do it!

Then it's the Falconer you want.
Sadly, the chances of it making into the game a very slim.
Not enough variants to fulfill the "3 variants to master" bullcrap, and i don't think PGI will bother making 2 extra variants for it.

Maybe it's time for some new weapons and tech?
